Dining At The Reimagined Daiquiri Dick’s On The Beach. As the saying goes, “As one door closes, another one opens!”  In the case of the all new Daiquiri Dick’s on The Beach in old town Puerto Vallarta, THIS Los Muertos beach door is swinging wide open! It’s ready for both a new generation of visitors and the clients who have made this Romantic Zone dining landmark their home for almost four decades.

Daiquiri Dick’s on The Beach, is being reimagined by the dynamic duo of Chef Wayne Elias and business partner Chris Diamond, expats and PV homeowners, who have been caterers to the Stars in Hollywood for over 30 years. They have also partnered with Puerto Vallarta local Javier Jimenez, whose keen eye has opened fabulous nightspots and developments, and is the master of our new look and ambiance – which will delight all our patrons!

Cooking and entertaining for the discernable tastes of their patrons is a lifelong passion of theirs, and they are honored to share those talents with friends, neighbors, and tourists alike in Puerto Vallarta.

Phil Lobel recently had a chance to sit down with the two and pick their brains on what Puerto Vallarta can expect at Daiquiri Dick’s on The Beach:

PHIL: PV can’t wait to savor your new menu. Give us an idea of what you have in store please:  

CHEF WAYNE: We will bring the best dishes that we’ve cooked for years with our culinary partner, Chef de Cuisine Martin Gonzales. He has joined us in the kitchen for decades at our restaurants MARKS in West Hollywood and Rockwell Table & Stage in Los Feliz, California. This will be a fusion of the SoCal Cuisine with Latin Flavors Vallarta is famous for. And, as there are so many Southern California visitors here, we will have some of our signature dishes such as Spicy Tuna Tacos, Jicama Slaw, Blue Corn Tortillas, Avocado Crema, Shrimp Ceviche Tostadas, Pico de Gallo, Avocado, Captain Crunch Onion Rings with Sesame Ginger Sauce, Birria Short Ribs, Sweet Potato Coin, Fresh Local Seabass, Corn Pudding, Sofrito Sauce and more. And, on Saturday and Sundays, we will feature our Beach Breeze Mimosa Brunch, an explosion of flavors that will awake your taste buds. Some of these dishes include our popular Homemade Carrot Cake French Toast with Cream Cheese Maple Syrup, and Braised Short Rib Skillet with Potato Mash, Arugula and Poached Eggs.

PHIL: Well, that’s a mouth-watering description. I know you have both been coming to PV for decades and recently became permanent residents.  What is it that has made this town so special for you, now that you have moved your lives and most of your business here?

CHRIS DIAMOND:  Well, you did your research and are correct, we have been PV “groupies” since before the turn of the millennium!  LOL.  What’s NOT to love about this city and its people?  Friendly, welcoming, and inclusive. We served such a diverse population in Los Angeles and that is the same here.  Both Wayne and I appreciate diversity.  Our Crumble Catering company that we still own together in LA dishes up for Hollywood’s most discerning palates, from Elton John at his annual OSCARS’ AIDS Foundation Viewing Party, to Aerosmith’s Steven Tyler and his Grammy Viewing Party Benefiting Janie’s Fund, to an endless number of Hollywood Movie Premieres, Small In Home Parties, or Dinners, Cocktail Receptions, Weddings, Birthday parties we’ve done it all.

PHIL: I’ve heard this partnership success has endured the test of time because you both bring an innate sense of “what is best for the customer” to the table (no pun intended).  Chris, I know you have been working for years with the late, great party promoter Jeffrey Sanker and his White Party events along with local entrepreneur Javier Jimenez (partnering with you on this project) in a variety of capacities, so your skill at assembling a great team remains unmatched.  Tell us a bit about the ambiance you hope to create.

CHRIS DIAMOND: (chuckles) Well yes, I have always felt it’s our staff (along with the food) that conveys who we are to the patrons. So, I do focus on seeking out charming personalities – staff whose energy you would want to have serving you in your home. 

CHEF WAYNE:  And, of course we never forget that “DAIQUIRI” is our first name and tourists come to have a great time.  So, we will have a cocktail menu second to none; plus, unquestionably the best Daiquiri’s – along with a Barrel of Rum that will literally be in a barrel that guests will be able to take away. We will feature a fabulous ocean front lunch & dinner and shared Tapas menu daytime and Après beach that’s also served on our adjacent, custom built, “Boat above The Sand” which will hold 40 to 50 people. It will also be used for private groups and weddings. And our music throughout will be a modern, relaxing vibe.

Owners anticipate an opening happening in time for the 2022 season.
