“CREMA LUNA” Braced huitlacoche creamy soup with cotija de rancho cheese, corn ash.
“CAPRESSE SALAD” Scalped tomato marinated with pesto, earth of olive and panela cheese, truffle oil.
“STARS SALAD” Mix of spinach, arandan, peach, goat cheese and sunflower seeds, organic agave honey dressing and mustard.
“TOSTADA DEL CHEF” Marine tuna with capers, avocado coulis, tomato air and toasted almonds.

“SARANDEADO VALLARTA” Fishing of the day marinated with our typical recipe and a delicious avocado mousse , cotija cheese and asparagus, brussels sprouts sauteed in clarified butter.
“NEW YORK SINATRA” Fine beef cut over a peanut mirror, smoked cherry tomato and baked carrots.
“CAMARONES RAICILLA” Flamed prawns with “ aguardiente del tuito”(raicilla), parsley aioli , couscous ajiporo and toast corn.
“ENCOSTRADO DE SALMÓN” Norwegian salmon with a three chili crust, sweet potato, mix of wild mushrooms, epazote and caramelized onions.
