Derived from the Spanish word for juice or zest, ZUMO promises a burst of flavor in every dish. Open for dinner Wednesday through Monday (closed Tuesdays), from 5pm to 10pm, with extended hours until 11pm on Fridays and Saturdays, ZUMO is set to tantalize taste buds with its modern Mexican cuisine and innovative flavor combinations.

Among the menu’s highlights are traditional Spanish croquettes infused with al pastor pork, a savory mushroom risotto paired with brisket, and a reinvented take on the beloved carne en su jugo featuring succulent short ribs.

Behind this exciting venture are owners Vanessa Villegas and Stewart Haverlack. Vanessa, renowned for her stewardship of the beloved Coco’s Kitchen, brings decades of culinary expertise to ZUMO. Meanwhile, Stewart, former proprietor of the acclaimed Boca Bento, joins forces with wife Vanessa to elevate Vallarta’s dining scene once again. Together, they also helm the esteemed Villa Limon boutique hotel and ZUMO restaurant in San Miguel de Allende, cementing their status as culinary luminaries.

Vanessa shares, “Bringing ZUMO to Vallarta was a heartfelt endeavor. This is our home, and we aim to create a welcoming atmosphere where guests feel like family.”
